Peanut Butter-Vegetable Soup

This recipe is excellent. I have made it several times and served it to several who were more finicky in their food choices and ended up loving the soup. When the were told the ingredients, they were amazed that they liked it.  It’s also very easy to prepare and the results are a very warming meal.

Tikil Gomen, Ethiopian Cabbage

This recipe is a combination of a couple I found on the net, trying to replicate a dish that I’ve ordered several times at a really wonderful Ethiopian restaurant called Cafe Lalibela, here in Tempe, Arizona. The dish is  excellent and I wanted to find a recipe that turned out as good as what they serve. This one does it, or is very close.
